2022 “Chimera”
39% Apples, 28% Pinot Blanc, 23% Pinot Noir, 10% Muscat
This vintage of "Chimera" is a whole new beast. All of the organically farmed apples are from the Willamette Valley this year instead of in the Columbia Gorge & Hood River AVAs. The quality of the four apple blend is markedly improved as I had a lot more control over picking and was able to do the processing of the apples with some help from Jasper at Son of Man cidery. The Pinot Blanc & Muscat are also from two organic sources in the Willamette Valley while the Pinot Noir is from Elkton AVA. Everything was processed and fermented separately before blending and bottling.
2021 “Stellium in Cancer” Petillant Naturel
95% Riesling, 5% Pinot Gris, <1% Apples
In years where I can find a good Riesling site, I’ll make this pet nat. The first time I made it was in 2018, have not made it again until the 2021 vintage, and did not make it in 2022. Half of the Riesling was direct pressed with the 5% of Pinot Gris in the blend. The other half was destemmed and left on skins for four days to eek out some extra texture. The barrels were topped with apple cider for the brief barrel aging they had before being bottled at while still actively fermenting. The result is a sparkling wine with ripping acidity, loads of flavor, and the kind of bubbles that can live forever. Open now or hold for 20 years.
2022 “Wicked Liquid”
39% Pinot Blanc, 32% Dolcetto, 16% Pinot Noir, 10% Muscat, 3% Syrah
Most years, I releases this sparkling pink wine in celebration of the arrival of Summer. There has never been a repeated blend of "Wicked Liquid;" in 2022 it comprises an unconventional: 39% Pinot Blanc, 32% Dolcetto, 16% Pinot Noir, 10% Muscat, 3% Syrah. Like all Lares wines, this bubbly bottling is designed to be consumed in its youth and shared with anyone with an empty glass.
2022 “Beyond the Moon and Mars”
34% Pinot Blanc, 33% Pinot Noir, 33% Early Muscat
An aromatic homage to Edelzwicker wines from Alsace, the 2022 "Between the Moon and Mars" is an equal parts blend of Early Muscat, Pinot Blanc, and white Pinot Noir. All parts were picked separately from different vineyards and vinefied and aged in neutral oak barrels for 8 months on their own before blending and bottling.
2021 “Tymora”
70% Gamay, 30% Pinot Noir
Gosh I love this wine. I’ll make it every year and adore the blend of Gamay and Pinot Noir. Both vineyards were handpicked on separate dates and fermented in open top vessels until dry when they were drained, pressed, settled, and racked to neutral French oak barrels. While the Pinot Noir was entirely destemmed, the Gamay was fermented with 30% whole clusters for some stemmy goodness. After a couple months in wood, the wines were then blended and bottled to create another great vintage of "Tymora!" There's a reason we hold this wine for Fall, and it's because it definitely benefits from the added bottle aging after bottling. Though picked plenty ripe, the acid from the Gamay elevates this wine making it bright.
